Vegan Peanut Butter Banana Ice Cream

Vegan Banana ice cream, also known as “nice cream”, is my favourite healthy ice cream because it’s so quick to prepare, this recipe is not only DELICIOUS but incredibly easy – no ice cream maker needed. When you freeze a banana, it becomes unbelievably creamy and delicious!

Made with only 5 ingredients, it is also suitable for all kinds of diets – vegan, low fodmap, dairy free, gluten free and refined sugar free.

Ingredients

3 x bananas
3 x tbsp of peanut or almond butter – I used crunchy, and my favourite is here
30g of dark chocolate chips
1/2 tsp of vanilla extract
1/2 tsp of cinnamon

Method

1. Chop the 3 x bananas into slices and freeze for 4-5 hours or overnight.
2. Blend the frozen bananas together until you get a creamy consistency. Add in the peanut butter and blend again.
3. Once combined add in the vanilla, cinnamon and chocolate chips and blend again.
4. Pour out the blended mixture into a tupperwear and pop in the freezer for 3 + hours.
5. To serve, take out of the freezer and let warm up for 10 minutes – top with melted chocolate and extra crunchy nut pieces or any other topping you like.
