Enter in, food trend. So, have you heard about this weird yet amazing thing called sweet potato toast?

Sweet potato toast is basically toast…without the toast. If you are gluten free or grain free and looking for a natural alternative or looking to switch up your morning routine, sweet potato toast could be up your street.

Sweet potatoes are a great source of beta-carotene (Vitamin A) which is fundamental for vision, cognitive and neurological function, nails and healthy skin. However, Vitamin A is a fat-soluble vitamin, which in other words means, to be properly absorbed, it needs to be consumed alongside fat. So consuming sweet potato toast topped with homous, nut butters and avocado is the perfect Vitamin A combination.

Sweet potatoes also offer a great deal of fiber, vitamin C and B vits. Although sweet potatoes are naturally quite sweet and have a medium GI, the high fiber content can help regulate blood sugar. Recent research has also shown that extracts from sweet potatoes can significantly increase blood levels of adiponectin in persons with type 2 diabetes. Adiponectin is a protein hormone produced by our fat cells, and it serves as an important modifier of insulin metabolism.


When preparing your sweet potatoes, you want them to be thin enough that they will cook quickly, but not so thin that they will bend in your hands or fall apart when you add your toppings. You also want the slices to be thick enough that you can actually cut the sweet potato relatively evenly.

I’d suggest that you aim for roughly 1/2-inch thick slices. I also trimmed the pointy ends off the sweet potato, because I was afraid they might burn during the toasting process.

Toasting raw sweet potato takes a good 5-6 toasts before they are cooked properly. Depending on the strength of your toaster and thickness of your tato-toast, it can take 15 minutes per batch.

You will know when the sweet potato is cooked through when you can mush the sweet potato through with a finger or fork.

  1. NUT BUTTER & BANANATop you tato-toast with a nut butter of choice and chopped bananas. Sprinkle with cinnamon for the added sweetness and warmth. Cinnamon helps control blood glucose – so why not?
  2. AVO & PUMPKIN SEEDStop with smashed avocado, a sprinkle of cayenne pepper and some pumpkin seeds. Pumpkin seeds are packed with Zinc, which is another nutrient that is fundamental for skin health. Avocado is filled with vitamin A as well as the sweet potato, so this combo is a skin health winner.
  3. HOMOUS & TOMATOEStop with full fat, creamy homous, chopped tomatoes and pomegranate seeds for a middle eastern morning.
  4. STRAWBERRIES & CREAMa healthy take on the British classic – top your toast with coconut yogurt or coconut cream and chopped strawberries – note, this is even nice as a dessert!
