Creepy Caramel & Pecan Bars
Ingredients
Crust:
- 160g oat flour
- 70g coconut sugar
- 100g coconut oil melted
- ½ tsp salt
- 1 tsp cinnamon
Mixture:
- 150g of coconut sugar
- 2 eggs
- 70ml of melted coconut oil
- 3 tbsp of runny almond butter
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ½ tsp salt
- 150g of pecans
- 70g of 70% plus dark chocolate
Method
- Preheat oven to 160C and line a 9 x 9 inch pan with baking paper
- To make the crust mix the oat flour, coconut sugar, salt, cinnamon and coconut oil together until you get a thick mix. Press the mixture into the bottom of the prepared tray to a thick layer
- Bake for 25 minutes and remove
- Put oven temp up to 180C
- Prep the filling – mix the 2 eggs, melted coconut, coconut sugar, almond butter, vanilla extract, salt and cinnamon together well. The mix in the pecans and chopped up chocolate
- Fill the crust with the mixture and pop in the oven. Bake for 25 minutes
- Remove from the oven and let cool fully before chopping into bars and enjoy!
