Creepy Caramel & Pecan Bars



  • 160g oat flour
  • 70g coconut sugar
  • 100g coconut oil melted
  • ½ tsp salt
  • 1 tsp cinnamon


  • 150g of coconut sugar
  • 2 eggs
  • 70ml of melted coconut oil
  • 3 tbsp of runny almond butter
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 150g of pecans
  • 70g of 70% plus dark chocolate


  • Preheat oven to 160C and line a 9 x 9 inch pan with baking paper
  • To make the crust mix the oat flour, coconut sugar, salt, cinnamon and coconut oil together until you get a thick mix. Press the mixture into the bottom of the prepared tray to a thick layer
  • Bake for 25 minutes and remove
  • Put oven temp up to 180C
  • Prep the filling – mix the 2 eggs, melted coconut, coconut sugar, almond butter, vanilla extract, salt and cinnamon together well. The mix in the pecans and chopped up chocolate
  • Fill the crust with the mixture and pop in the oven. Bake for 25 minutes
  • Remove from the oven and let cool fully before chopping into bars and enjoy!
