Gut Loving Black Bean and Avocado Brownies
Welcome to our delicious and nutritious Black Bean and Avocado Brownie recipe! These brownies are not only rich and fudgy but also pack a healthful punch. Made with wholesome black beans and creamy avocado, they are a fantastic source of fibre, helping to support digestive health. Ingredients
- 1 can of black beans, rinsed and drained
- 1/2 of a large ripe avocado
- 1 tablespoon melted coconut oil or olive oil
- 50g unsweetened cocoa/cacao powder
- 2 eggs – or 2 x flax/chia eggs
- 1/2 teaspoon baking powder
- 1/2 teaspoon bicarbonate of soda
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 150g coconut sugar
- 60g dark chocolate chips
- 40 walnut halves or pecans
Method
- Preheat oven to 180C and line an 8×8 inch pan with baking paper
- Place all the ingredients except the chocolate chips into a blender and blend until you get a smooth batter – it might take a while as you don’t want lumps!
- Then add in the choc chips and walnuts/pecans and blend for a minute until mixed in
- Pour the batter into the prepared pan and top with the remaining chocolate chips
- Bake for 30 minutes or until knife inserted in centre comes out clean.
- Let the brownies cool fully before cutting, serving and enjoying!
