Gut Loving Black Bean and Avocado Brownies

Welcome to our delicious and nutritious Black Bean and Avocado Brownie recipe! These brownies are not only rich and fudgy but also pack a healthful punch. Made with wholesome black beans and creamy avocado, they are a fantastic source of fibre, helping to support digestive health. Additionally, these brownies are a great way to boost your magnesium intake, essential for muscle function and energy production. Enjoy for their nutrition and their flavour!


  • 1 can of black beans, rinsed and drained
  • 1/2 of a large ripe avocado
  • 1 tablespoon melted coconut oil or olive oil
  •  50g unsweetened cocoa/cacao powder
  • 2 eggs – or 2 x flax/chia eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 150g coconut sugar
  • 60g dark chocolate chips
  • 40 walnut halves or pecans



  1. Preheat oven to 180C and line an 8×8 inch pan with baking paper
  2. Place all the ingredients except the chocolate chips into a blender and blend until you get a smooth batter – it might take a while as you don’t want lumps!
  3. Then add in the choc chips and walnuts/pecans and blend for a minute until mixed in
  4. Pour the batter into the prepared pan and top with the remaining chocolate chips
  5. Bake for 30 minutes or until knife inserted in centre comes out clean.
  6. Let the brownies cool fully before cutting, serving and enjoying!
